Brownie Surprise

Life should be an adventure. Life should be fulfilling.  But most people are so bogged down in life issues that they forget to savor the joys of life’s finer pleasures.  Food often becomes demonized as the good or bad instead of being enjoyed for the pure pleasure it offers.

Dessert is one of the areas where people tend to believe they are not entitled to enjoy a guilt free delight.  For many every bite is filled with guilt. Yet, who doesn’t love dessert?  Lets be honest, a chocolate brownie after a meal really hits the spot- doesn’t it?

If you’re like me and enjoy an after dinner sweet this delicious brownie surprise will really hit the spot and it’s guilt free, even better.  I bet your wondering what the surprise is?

Dietary fiber.  Say What? How is it possible to have dietary fiber in brownies.  I’ve added kidney beans, a little twist on a time honored recipe.  Yes you read right kidney beans, the favoured bean of chili has made it into my brownie and unless I told you, you would never  know it when eating these delicious fiber filled brownies.

I love dietary fiber, it adds to our ability to maintain weight in a healthy range, keeps our digestive system happy and healthy and best of all it makes us feel full thus helping us to control our trips to the fridge.Let’s get to it, Natasha my most fussy eater loves these so you know they must be good. Here’s Natasha busy in the kitchen.

Put the kidney beans in a blender.

Add 1 cup of milk and 1 tablespoon of vinegar.  This is how you make buttermilk in the field, the field being any place where you don’t have access to a fully stocked supermarket.

Non fat milk has 0% fat

Skim Milk add 0% calories from fat

Add 1/3 cup of light brown sugar,  2 eggs and a dash of vanilla extract to the blender.  Blend for 15 seconds.

Now for the dry ingredients

1 cup flour, I used white, but you can use whole wheat or 50/50.

1/2 cup cocao.

1 tsp baking powder and a dash of salt about 1/2 tsp.

Mix dry ingredients together and then add to wet ingredients.  Add slowly and mix after each addition.  Dry to wet – mix, dry to wet – mix and repeat about 4 times.

Pour mixture into a pre-greased and floured pan – this makes sure it doesn’t stick to the pan.

pop in the oven at 180 celcius for 30-40 minutes, my oven doesn’t heat evenly around do I check often and use my nose as a guide.  You’ll be able to smell something incredible and that will signal that it’s getting close to being done.

If you have a tooth pick test the center of the cake, careful it’s hot.  If the toothpick once depressed into the center comes out clean the brownies are finished. Take them out of oven and let cook before cutting.
