No Bake Energy Bites
MAKES 8-12 Bites
- 1 cup pumpkin seeds
- ½ cup sunflower seeds
- 200 grams approx 3/4 cup pitted Medjool dates, soaked for 1 hour
- ¼ cup flax seeds
- Pinch sea salt
- 2 tablespoons raw cacao powder
- 1 drop cinnamon oil or 1 tsp cinnamon
METHOD. In a food processor, combine the pumpkin seeds and sunflower seeds. Pulse for 30 seconds to 1 minute. Place the ground seeds in a separate bowl and set aside. Add the soaked dates to mixture and process until there are no large pieces. When the mixture resembles dough, stop the food processor and stir with a spoon. Shape into 1-inch bite-size energy balls. Store in an air-tight container in the fridge.
